OUR OIL, thanks to this existence at the northern limits of olive cultivation, has unique and unparalleled charateristics.
Garda seasonal temperatures are ideal for:

  • Oil production that is never too abundant . It is well known that ferile lands and a favorable climate help boost production. This does not, however, necessarily lead to high product quality.
  • Slow ripening of olives, permitting olives to be harvested to produce:
    • superior quality oil
    • light oil
    • extremely low acidity (average 0,50%)
    • delicate bouquet and a strong to intense golden green colour due to the high chlorophyll content
    • no abnormalodors or flavors

The olive harvest in our age-old groves (approximately 70.000 trees) starts in November using special ladders, called "scalini" which can ever reach 8 to 10 meter heights, Olives are harvested by hand the olive growers and the product is carried to the mill for pressing an quickly as possible.

It is a well known medical fact that daily use of extra virgin olive oil helps protect our health.

This oil in fact, is basically composed of monounsatured fats (oleic acid) that increase the presence of special proteins, called HDL, in the blood.
These are called new generation of "dietitians" because they help keep cholesterol in the blood below desirable limits.

Extra virgin olive oil also had antioxidation properties that help decrease the danger of tumors. Gerentological studies have demonstrated that olive oil, thanks to its anti "free radical" action helps extend human life span by even more than five years.
